About the coffee

The Aguilars are a family of indigenous Mayan coffee producers who speak Mam. They have been in partnership with Kapeh Utz since we began purchasing coffee from Rio Ocho. Cultivated in the Sierra de Los Cuchumatanes mountains of Huehuetenango, this micro-lot is located in a sector of Rio Ocho that is called Tui Poj. The Aguilars are committed to organic farming practices, but do not have organic certification due to the significant financial investment required for certification. Unique to their growing area, the family de-pulps the coffee cherry in their parcels and then transports it to their home to complete the wet mill process. After processing the coffee in an artisan wet milling process, Eduardo then dries his coffee on black nylon and concrete patios in full sun.
